Then why not try Bernadette's eggplant parmesan bake tonight?
(Courtesy of The Frederick News Post July 28,1976).
For the sauce:
1 medium onion,peeled,finely minced
1/2 cup green pepper,minced,optional
2 stalks celery,minced
1/2 tsp. garlic salt
3 cans (8 oz each) tomato sauce
1/2 cup water
1 1/2 teaspoons dried basil
1 teaspoon chopped celery
1/2 tsp. dried oregano,crumbled
1 bay leaf
dash of sugar to taste
salt,freshly grounded pepper to taste
1 small potato,peeled,grated
Combine all ingredients except the potato in a saucepan.
Bring to boiling point,reduce to simmer
cook slowly uncovered about 1-1.5 hours,stirring often to prevent burning
add potato during last 30 minutes
rub sauce through colander or put into electric blender,whirling long enough to make a smooth sauce. Set aside.
For eggplant:
1 eggplant,weighing about 1 lb.
salt,freshly ground black pepper
spray cooking oil
1 six oz. package cubed mozzarella cheese
1/2 cup freshly grated Parmesan cheese
1/2 tsp. crumbled basil
1/2 tsp. dried oregano,crumbled salt,pepper
Wash eggplant,cut into 1/8 slices
Sprinkle with salt. Drain 15 mins to draw out water. Pat dry.
Dust lightly with salt and pepper. Spray large skillet lightly with spray vegetable oil or heat Teflon-coated pan over medium heat.
Brown eggplant slices lightly on each side. Line 9X12 inch baking dish with aluminum foil.
Pour some tomato sauce in bottom of casserole. Add layers of cooked eggplant,tomato sauce,Parmesan cheese,herbs,and seasonings. Repeat until all eggplant is used. Pour extra sauce and cheese on top of final layer of eggplant.
Cover,bake in preheated 400 degree oven for 20 mins or until cheese is brown and bubbly. Serve immediately.
(Bernadette had been a vegetarian for about a year when this article/recipe was printed.)
What else does she like to cook (as of the time of the article printed)? Lasagne (making her own noodles!) with a soybean meat replacement,bakes zucchini casserole,etc. She's also looking forward to trying out the vegetarian restaurants in London when she goes there to tape a special pretty soon.

Mother and grandmother taught her how to make Italian dishes.

Except for the garlic salt, it sounds delicious--and she gives the instructions in such detail. I'm definitely going to make it. A big thank you for that!

But when I grew my own tomatoes and eggplant, I did make a similar dish; except that I used much FRESH basil-because basil apparently likes the hot dry Maryland summers and grew into small shrubs.

| posted: 4/1/2004 at 11:53:00 AM ET I honestly did not know she was a vegetarian, but I did notice that on the Actor's Studio interview that she said her most unlikely job would be "butcher".
I've been a veggie since 1982. It's been great.

From: Arizona | posted: 4/2/2004 at 12:22:09 AM ET I remember hearing her say she was a vegetarian but eats fish/seafood on Regis a couple years ago so I assumed that meant no red meat, pork, or poultry. Could someone who just doesn't eat red meat really be classified as a vegetarian??
Either way, it doesn't really matter. We all know that Bernadette is a true animal lover and has gone beyond her duty to promote animal adoptions and save homeless cats and dogs.

The article stated-but did not include a direct quote-that she had been a vegetarian for a year. Now,whether a comment about no red meat was thought (by the journalist) to mean a vegetarian diet is another matter. That can happen.

| posted: 4/2/2004 at 11:34:03 AM ET The term I have heard thrown around lately is "flexitarian" - to be predominantly vegetarian, but to also eat fish and sometimes even poultry on occassion. There are some folks who are very hardcore about their dietary regimens; "vegans" never eat any animal products whatsoever.
As noted above, Bernadette obviously has a very sincere and commendable concern for the welfare of animals. Eating a piece of fish here and there is fine by me!

I too only eat fish, and have that same notion, that fish is not meat -- from all those fish-sticks Fridays.
