The "Actor's Studio" interview is hard to beat. I love the one done on CBS Profile the morning of the Tony's 2003, especially with all it's great clips from the show.

The 1997 Tom Snyder interview was surprisingly good--very extensive and much more personal than I would have expected. They really seemed to have a lot of rapport.
